I've always read 'deflecting bullets with a sword' as the difficulty for actually redirecting them to a different target rather than merely parrying them, and that would be a defensive stunt hence you would need to roll.

Defensive stunt ? Where in the book is that ? Sounds good
though I don't like the idea having the players roll out of turn,
lengthens the battles even more...

Prospero, I don't like "offturn" rolls either, so I got a house rule where the players can do a counter-attack as an active dogde. Read more about it in the link.
