While as water, it behaves as water behaves naturally - gravity causes it to fill the mold. Muto gave it the property to flow like water, then natural forces did the rest.
In my opinion when the Muto effect wears off, it shouldn't revert the natural changes as they were separate to the Muto effect. So the pieces of stone are now naturally mushed together in the form of a block of stone, whether it is a solid block or crumbly may be saga dependent.
