It becomes a rather different kind of device, and because the spirit looses might every time the ritaul is activated, it becomes more like a charged (though re-chargable) device.
Probably more effort that it is worth.

Carboninated water doesn't really exist back in the 13th century, so magic would have a hard time reproducing it. Carbonated water was invented/discovered in the 19th century. Beer still was fizzy but for different reasons.
