Under the guidelines for Perdo Imaginem spells it states that there is a +1 magnitude for changing images, but what if you are casting a spell that affects all five senses? Does that become a +5 magnitude for all five senses involving changing images?

Judging by the sample spells, my answer would be No.
The "image" terminology does tend to suggest vision, but in actuallity refers to the imaginem construct which is emitting the relevant species. Therefore, the number of species types being produced by the image should have no bearing on the difficulty of affecting a moving image. (The increased difficulty of affecting different types of species is already reflected in the higher base levels for the various senses).
