Is it normal that ship sail has lost its "+7 sailing" bonus in DE from core?
It's normal in the sense that it has happened every time that ArMD has been published, yes.
I think it was because "Ship" only gives +5 to that, so it was errata'd.

In the Bestiary section, I noticed a discrepancy in the Wolf characteristics between the wolf’s writeup on p. 435 and the wolf characteristics used in the shapechanger example on p. 441
On p.435, they are: Cun +2, Per 0, Pre –2, Com 0, Str –1, Sta +3, Dex +2, Qik +2
On p. 441, they are: Cun +1, Per +2, Pre 0, Com +1, Str –1, Sta +3, Dex +2, Qik +1
Having not done the math, I suspect this is due to the stats being modified by the stats of the human. A shapeshifter's stats reflect their human stats, not just the animal's.
That's a discrepancy. (The combined stats are listed after those wolf stats.)

Ewww. Neither of those look correct. I'd noted some issues with the original wolf stats, and some of the fixes showed up on p.435 and others on p.441, but neither has all of them. Unless I'm mistaken, they should be
Cun +1, Per +2, Pre -2, Com +1 or 0 (pack leader or not), Str -1, Sta +3, Dex +2, Qik +2
Ulf in Heartbeast form wasn't present when I was doing those edits. Those come directly from HoH:MC (with erratum on -1+2=-1), except for Cunning.
Unfortunately, "different species" doesn't really fix the first one, as it's internally inconsistent.
Looks like we need someone else to check again. I certainly intended to double-check and incorporate your corrections, and I remember doing it, but things could certainly have slipped through. That bit was very fiddly…

The relevant other Qualities:
- Agressive +1 to Cunning
- Keen Sense of Smell: +1 to Perception
- Sharp Ears: +1 to Perception
- Vocal: set Communication to 0
- (possibly Pack Leader): for the leader only, +1 to Communication
So now we're at:
Adjusted for Qualities: Cun +1, Per +2, Pre -2, Com +1 or 0, Str 0, Sta 0, Dex 0, Qik 0
Now add 7 point to physical Characteristics and between 4 and 6 points more for 2x Improved Characteristics
Adjusted for physical Characteristics: Cun +1, Per +2, Pre -2, Com +1 or 0, Str +1, Sta +6, Dex +2, Qik +1 (Note, Qik could be +2, as there are enough points, but it need not be. This done with the minimum +4 for 2x Improved Characteristics. Any fewer and there would not be 2x Improved Characteristics.)
Now adjust for its Size -1:
Adjusted for Size: Cun +1, Per +2, Pre -2, Com +1 or 0, Str -1, Sta +3, Dex +2, Qik +2

There is another issue: Abilities.
- Hardy grants Survival 5 (home terrain), changing it from the default Survival 3.
- Nothing changes its Athletics, so that should still be the default Athletics 3.
- The specialization on Hunt is a little questionable, but I figure it's how it hunts prey so it's probably fine.
