There are several descriptions of sahirs, sihr, and the Order of Sulaymon out there, some almost contradictory. Where can I find the system that is currently canon?

The canonic description of the Order of Suleiman and Sihr is still in TC&TC.
The Cordovan Sahir split off. The resulting Hermetic Sahirs and their Sihr are described in HoH:S, and the remaining scattered Sahir from Northern Africa in BS&S.

Also, you have a whole section on Hermetic Sahir on Finis Terrae, though it has some overlap with HoH:S.
