Are you saying you're changing the aspect of Anamorphs that what people see is determined by emotional/mental state? Or just clarifying that it's caused by lack of detail?
clarifying that it is caused in part by a lack of detail, ad that there has to be enough definition to the illusion to provide a category for their mind to grab hold of. "A nobleman" has far more definition than "a person", and either of those have far more definition than "they see what the expect to be in the mirror"

this might be a bit overpowered, as it will destroy all dirt than enters the room, at sunrise and sunset. The duration is off as well, realistically a perdo effect does not need a duration unless what is being destroyed might return naturally (for example to keep a wound from healing). Assuming the enchantment was tuned to ignore any significant source of dirt (for example a potted plant if you wanted such) or manufactured earth (aka clay, ceramics, mineral based pigments, etc) then the item will work equally well without the sun duration.
The spell it is based on is Moon duration.
Very well then, the enchantment works, including the warping score.

I have not yet examined the structure of the covenant itself yet, but I have begun checking the list of enchanted items- I note an issue with Neptune's Anchor- vision target is subject to the limitations of vision, including not being able to see in darkness and reduced range through visually obscuring materials like murky water. Given the environment of the northern seas, I believe hearing would be a better target while still allowing a sense of direction. The downside to using hearing is the effect would not penetrate the air/water boundary, where vision will... so I leave it to you which way you want to go with this effect

No, but I would allow artes liberales with a +2 target number.
Also the Naiad's cask is overpriced- minerals should be the same as rocks, not metals, and thus +1 to magnitude instead of +2. IMO the +1 complexity should be replaced with a +1 requisite effect as well, but that is more descriptive than about the final price.
Which skills are necessary to operate a ship safely? This is really about the grog I design to pilot that ship. (I'll need to fix him to have Navigation.)
Is Navigation sufficient? Or is it essential to have both Navigation and the Profession?

Assuming we are talking a standard ship, navigation is required to determine course, profession sailor to get the ship to go where you want it to go. Simple point to point navigation does not require a roll or ability.
Olav Tryggvason's Chart has some issues- primarily as written is will not get the range that is described: as written it is only usefull to about 77 feet given the standard size individual for Aq. To work as described it would require 5 magnitudes for increased size in the white sea (based on the maximum depth for the seabed) descriptively to should be concentration and maintains concentration to allow for constant flow of new information without recasting for a new target every time the boat moves.
The nailed down chamber pot should be base 5, not base 4, since the guideline for base 4 is "do no real damage"
the Abulere Magica should require an animal requisite for animal based clothes (wool, silk, etc) but at no extra cost. It does replace a standard professional ability (washerwoman) with finess, which would likely require a specialist or a PC created grog to handle, If combined with other finesse requiring labor saving devices I can calculate a final savings, but it is bought full that the device as described would save 1 servant
the dumb waiter uses ReCo guidelines instead of the newer ReTe guidelines, meaning it a base effect 10 higher than required, though you may make that only 5 difference to extend the range to 500 paces. Also to get maximum benefit from this device it should have unlimited uses per day instead of 24, which would be unlikely to replace even a single servant.
Instead of a cost savings for vitalizer of provisions I'm going to give it a +1 healthy feature bonus to the covenant

The ship is not so much for the white sea. Sognefjorden, i.e. our home waters, go down to 1300m ... but never mind. It is not necessary to chart to the bottom, I think.
An increase in depth will lead to a decrease in diameter, since the base effect is by volume which defaults to a sphere, unless you set a maximum depth in the item design.

If I compute correctly, if we increase to +6 size, we get an even 2750' in all directions, including depth, thus keeping with your sphere default. Is that ok?
