how would magi handle various disabilities with magic?

Creo magic, mostly...

CrCo for the body,
CrMe for the mind

Perhaps Intellego magic for those with sensory disabilities...

That raises another question: people actually born with disabilities,
¿can be cured, or is it part of their fundamental nature and thus beyond Hermetic Magic?

If taken as a Flaw , it is considered part of Essential Nature.

as other people point out, if it's a Flaw, its' part of Essential Nature and can't be removed by normal means.
Another way of saying this, out of character, is that it ain't a Flaw (points!) if it doesn't cause Problems!

It is entirely plausible to have a character who has been cured of some birth flaw...
- the ones we see around in the game either have no access to expensive (is!) Hermetic magics, or have already tried and failed (Apprentices, Companions & Magi) so that the Flaw remains with them.
